When it comes to celebrating Real Pork, one of the best ways to do it is alongside family and friends. Chad Forbis and his son, Jude, of Des Pere, Mo., share how they’ve perfected the infamous Bisquick sausage cheese balls.
“There is a lot of controversy over using 2 or 3 c. of Bisquick. So, we just settled by using 2.5 c., hence the name ‘Version 2.5,’” Chad says. They also added an optional dipping that caught our eye.

Spicy Sausage Cheese Balls, Version 2.5

Ingredients:
1 lb. (1 tube) ground spicy pork sausage
1 lb.(4 c.) freshly shredded sharp cheese
2.5 c. Bisquick or Biscuit Mix
1 tbsp. Sriracha sauce (optional)
Optional: Spicy Creamy Dipping Sauce
Mix Dipping Sauce ingredients together in a small bowl.
3 tbsp. sour cream
1 tbsp. mayonnaise
1 tbsp. Sriracha sauce
Directions:
1. Preheat oven to 350°F.
2. Mix all ingredients in a medium-sized bowl until well combined.
3. Form the mixture into balls the size of ping pong balls.
4. Place balls an inch apart on two cookie sheets.
5. Bake at 350°F for 20-25 minutes until they are golden brown. For more well done sausage balls, place under broiler setting for 1-2 minutes. Serve warm.
Fully cooked sausage balls can be frozen and reheated in the microwave for 30 seconds to 1 minute.
Fully cooked sausage balls can be placed in crock pot and set on low setting for gatherings.
Yields about 36-48 sausage balls, depending on the size of the sausage balls you form.
Pork Chop Stuffing Casserole

Ingredients:
6 boneless pork chops
1 can cream of mushroom soup
1/4 c. milk
1 box stuffing mix
Directions:
Preheat oven to 350°F. Place pork chops in a 9x13 pan sprayed with cooking spray. Mix soup and milk in bowl, pour over top of each chop. Prepare stuffing according to package, spoon over chops. Cover with foil and bake approximately 1 hour until internal temperature is 145°F. You can also uncover last 20 minutes or so of baking for top of casserole to brown.
