Boston Butt Pork Burger Launches In Colombia Through USMEF

This new concept of using the Boston Butt versus pork trimmings has resulted in high consumer acceptance.

The Boston Butt Burger, or BBB as its being called, is a new take on the pork burger and has been picked up all over Colombia, according to Homero Recio, the U.S. Meat Export Federation representative to the country. This new branded product was brought to market through the support of the National Pork Board and USDA.

“We’re calling it the BBB,” Recio says. “It’s not a burger made with pork trim. This is a Boston Butt burger. It’s different.”

The science behind the new product is similar concept of a beef burger made from the chuck versus just beef trimmings.

“This is a different product,” Recio says. “It has marbling. It has better, firmer fat. It’s going to cook differently and stay juicier.”

Results from market research have shown unprecedented consumer enthusiasm.

“Before we presented it, we used a firm in Colombia that’s been around for 30 years,” Recio says. “They told us that they were astonished by these results with consumers.”

The testing included 161 consumers in two different cities and people that represented about six different cities in Colombia.

“They said in their 30 years of doing this work, they had never had a product that was met with such consumer acceptance,” Recio says.

Additional parts of South America have been utilizing this same concept with a different approach.

“In Chilé, there’s another company making the pork into a ball, instead of a flat patty, branding it and marketing it as a pork smash burger from the Boston Butt,” Recio adds. “It’s going to be sold at retail.”
